Today we would like to tell you about a cliff-hanger of a different kind, The Cliff House Hotel in Waterford. The reference to a Cliff-Hanger will become apparent later on in this blog. The Cliff House Hotel is situated in Waterford, which is located in the southwest of Ireland in the state of Munster and the city is positioned at the top of Waterford Harbor. The Name Waterford comes from the Irish word “Láirge” meaning “Lárag’s Port” but its motto in Latin, “Urbs Intacta Manet Waterfordia” meaning “Waterford remains the untaken city” is of great historical significance as it was bestowed by King Henry VII.

Waterford’s history dates back to 853 when Viking raiders established its first settlement. But it wasn’t until 914 that the Vikings re-established themselves in Waterford and eventually the Uí Ímair dynasty built Ireland’s first city in Waterford. The river Suir runs through the city and Waterford Port, which has existed for over a millennium, generated a major industry in shipbuilding in the 19^th century.

Waterford is steeped in an abundance of history and is blessed to have some of the most spectacular scenery across which an individual can come. Among this glorious scenery is The Cliff House Hotel. For once, I was rendered speechless when I arrived at Cliff House Hotel because of the jaw dropping panoramic views over Ardmore Bay. The hotel literally melts onto the side of the cliff as if nature had intended it to formed there (hence the referral to a cliff-hanger earlier). This magnificent beast of a building overlooks one of the most spectacular maritime vistas ever experienced in Ireland.

The architectural design of the building, although very sympathetic to its surrounding, takes complete and utter advantage of the awe-inspiring views. Without a doubt, there is no where else on earth that you could walk six floors of a five-star hotel, gaze out the window and be left encapsulated in the sheer magnificence of a scene. The moment you enter the foyer, the attention to detail in the materials used to furnish the building are exceptional. From cupa stone columns to magnificent modern staircases that produce an interior of interest as well as style and comfort.

The 39 rooms have views of the sea while the suites offer sensational views of Ardmore Bay. Each luxury room comes with is own private terrace with views overlooking the sea and are adorned with unique art work by leading Irish artists. Additionally, en suites come with contemporary egg-shaped baths, rainforest showers and beautifully designed mosaic tiles.

The suites at The Cliff House Hotel are truly luxurious with split-level, loft-style interiors that are more in keeping with a contemporary LA home than a hotel. Downstairs, features include 18^th century campaign furniture, flat-screen TV’s and stunning stone fireplaces. Conversely, upstairs features include full-height glass doors which open onto a substantial private veranda.

Also of particular interest is the Cliff Cottages. They are exquisitely designed luxury self-catering cottages that bring a contemporary and luxurious feel to a traditional space while providing a bright and open feel. The award winning, Michelin Star The House Restaurant is a foodies dream come true. Chef Martin Kajuiter expertly works together dishes made from produce sourced from Ireland and creates a blend of dynamic, contemporary but simple fine dining dishes. Diners can choose from a tasting menu or an à la carte menu. Now to the good bit!! The food at The House Restaurant is absolutely amazing and dreadfully more-ish!! There are so many wonderful dishes that I have whittled it down to a few of my favorites that I am positive you will enjoy.

From the Sample Tasting Dinner Menu, the trio of must-tries I have selected are the Duck Foie Gras, Albacore Tuna and the Helvick Torbot. Highlights from the A La Carte menu include starters such as West Cork Scallops, Bantry Bay Organic Salmon (the best I have ever tasted) and King Crab & Chicken. Of particular interest on the mains menu is the Irish Rose Veal, McGrath’s Black Angus Beef and the best Helvick Monkfish I have ever tasted, bar none.

For those of you who would enjoy a bit of decadence in the afternoon, The House Restaurant offers an Afternoon Tea with a difference. I must say, it is the best looking afternoon tea that I have ever seen and features Organic Egg Mayonnaise & Corned Beef (divine), Yawl Bay Crab and Organic West Cork Smoked Salmon. This is accompanied by (if you have any room left) freshly baked raisin & buttermilk scones with cream, homemade fruit preserves, Ardmore carrot cake (yes there is more), Irish tea & whisky fruit cake and finally….white chocolate & lemon tart with candy floss topping. Phew! Quite a lengthy list and my advice is to try just a little of each.

The Hotel also has is own resident bar, The Seafront Bar which exudes calm in it design and form that has discrete nautical undertones. The Seafront Bar includes a restaurant which offers a bar menu that is as chic as it is enjoyable. The lunch menu offers a diverse range of sandwiches, seafood and melt-in-the-mouth Rib-eye Steaks while the desserts offer sheer decadence and a homage to sinful food.

Alternatively, the dinner menu offers delectable, finger-licking dishes such as McGrath’s Sirloin Steak, Skeaghanore Duck Breast and the highlight for me is the Free Range Pork Belly.

The Cliff House Hotel presents one of the finest Spas in the country, The Well Spa. This luxury spa derives its name from St Declan’s Well which is a stones throw walk from the hotel. Consistent with the theme of the rest of the hotel, the spas glorious interior is an architectural and aesthetical masterpiece. An immediate feeling of calm and luxury immediately envelopes you as you inhale the sensual oils wafting through the tranquil space.

The spa offers an assortment of top of the range, innovative therapies that reflect Irelands naturally occurring elements. You can choose treatments that are made from certified organic seaweed harvested from the Irish coast or how about an Irish peat bath drawn from the Irish landscape. My favorite treatments are as follows: The first is the Anne Semonin Detoxifying Spirulina Envelopment which is a seaweed detoxifying and energy boosting treatment that cleanses the body and eliminates toxins.

The second, strange as it may sound, is an outdoor bathing therapy called the Organic Seaweed Bath, which claims to plump skin and relax muscles using organic seaweed; truly relaxing and stimulating at the same time.

There is a 15m pool for guests to enjoy which boasts floor-to-ceiling windows through which you can enjoy panoramic views of the ocean. There is also a natural outdoor rock pool which is an amazing experience to behold at full tide.
